1. TODAY’S SOUP ROASTED RED PEPPER AND TOMATO

Sautéed onion, garlic, celery, roasted tomato, fire roasted red pepper are simmered  with herbs and spices and garnished with croutons and parmesan cheese.

2. MEXICAN PRAWN COCKTAIL

Lime poached prawns are chopped and blended with onions, jicama, cilantro, spicy tomato sauce and avocado. Served with a lime wedge and blue corn tortilla chips.

3. MOROCCAN LAMB CURRY

Fresh lamb is sautéed with eggplant, onions, carrots, garlic, tomatoes, roasted red peppers, kalamata olives and dried apricots simmered in spicy curry broth and served over saffron-currant rice. Topped with toasted almond, fresh mint, served with grilled pita bread brushed with olive oil.

4. GRILLED MEDITERRANEAN WILD SOCKEYE SALMON

A fresh wild sockeye salmon filet is marinated in a salsa verde of fresh parsley, mint, capers, anchovy, extra virgin olive oil and garlic then grilled. Served on mediterranean orzo salad with lemon vinaigrette, kalamata olives, sun-dried tomatoes, arugula and fresh basil topped with toasted pine nuts and grated reggiano parmesan.
