1. TODAY’S SOUP SPLIT PEA & HAM

Black Forest ham, celery, onions, carrots and split peas are simmered in a fresh chicken stock and topped with fresh parsley.

2. SOUTHWEST CORN CHOWDER with PABLANO GRILLED CHEESE SANDWICH

Corn, poblanos, celery, onion, garlic, cumin, cilantro and yukon gold potatoes are simmered in white wine, vegetable stock and finished with cream and topped with crispy fried bacon. Accompanied  with a grilled poblano pesto and pepper jack cheese sandwich.

3. POLO’S RANCHERO STEAK SALAD

Flank steak is marinated in pineapple juice, soy sauce, chipotle peppers and garlic then grilled and served over grilled radicchio and romaine lettuce tossed in our house made spicy ranch dressing with cucumber, radish, garbanzo beans, diced tomato and avocado topped with cotija cheese.

4. SCALLOP AND ASPARAGUS RISOTTO

Jumbo scallops are pan seared with fresh asparagus and blended with a creamy risotto of leeks, garlic, fresh basil, crushed red chili flake, lemon, italian parsley, white wine, rich vegetable stock and finished with butter and parmesan cheese. Served with a side mixed green salad tossed in our balsamic vinaigrette.
