4. MEDITERRANEAN COPPER RIVER COHO SALMON

Copper River coho salmon filet is marinated in a salsa verde sauce of blended Italian parsley, mint, capers, anchovy, extra virgin olive oil and garlic then pan seared. Served  on a Mediterranean orzo salad with lemon vinaigrette, castelvetrano olives, sun-dried tomatoes, arugula and fresh basil topped with toasted pine nuts and reggiano parmesan cheese.
